Papdi

Ingredients:

1.Maida 1 cup
2.Sooji 1/4 cup
3.Oil 2 tbsp
4.Potatoes boiled and peeled
5.Boiled Chick peas
6.Curd
7.Salt to taste
8.Roasted Cumin powder
9.Red chilli powder
10.Hari chutney
11.Tamarind chutney

Preparation:

1.In a bowl mix flour, sooji, salt and oil.Add the water a little at a time while kneading until it forms a firm dough
2.Divide the dough into 3 equal portions,roll them into small thin puris.Repeat the same process for other 2 portions.
3.Heat the oil in a frying pan on medium heat.
4.Slowly drop the rolled papdis in hot oil and deep fry till light golden color.
5.Remove cooked papdi and transfer to a plate.Continue cooking the remaining papdi in batches until all the dough is gone.
6.Mash the chickpeas lightly with the back of a fork and mix with hari chutney.Put the yogurt into a bowl and mix with a fork or whisk until very smooth.
7.Arrange the papdi on a large plate.Place a slice of potato on top of each papdi.Now place half a teaspoon of the chickpea mixture over each potato.
8.Drizzle yogurt over each papdi.Sprinkle roasted cumin powder, and red chili to your taste.Finally drizzle some tamarind chutney.
