1.Milk 8 cups
2.Sugar 1/2 cup
3.Lemon juice 2-3 tbsp
4.Sliced Almonds 1 tbsp


1.Mix lemon juice in ΒΌ cup of hot water and put aside.
2.Boil the 4 cups of milk in a heavy bottomed pan over medium heat, stirring occasionally, making sure not to burn milk.
3.As the milk comes to a boil, add the lemon juice gradually and stir the milk gently. The curd will start separating from the whey, turn off the heat.
4.Drain the excess water from the separated milk,wrap the curdled milk in muslin cloth under cold water.
5.Squeeze excess water from wrapped muslin cloth.
6.Boil remaining milk in a heavy bottom frying pan on medium high heat until the milk reduces to about two cups.
7.Add the paneer in the milk and keep stirring till the mixture thickness and form a soft dough consistency.
8.Add the sugar and continue to cook and stirring until the mixture become soft lump.Pour the mixture into a greased plate.Let it cool for about an hour.Cut the kalakhand in square shapes and serve.
