Spicy Squash


1.Mango powder 1 tbsp
2.Sugar 4 tbsp
3.Coriander leaves 2 tbsp
4.Bottle gourd 4c ups
5.Oil 3 tbsp
6.Asafoetida 1/8 tbsp
7.Cumin seeds 1 tbsp
8.Fenugreek seeds 1/2 tbsp
9.Coriander powder 1 tbsp
10.Fennel seeds 1 tbsp
11.Turmeric powder 1/2 tbsp
12.Red chilli powder 1 tbsp
13.Paprika 1/2 tbsp
14.Salt to taste
15.Red chilli 4 whole
16.Ginger shredded 1 tbsp
17.Lemon juice 1 tbsp


1.Peel and cut bottle gourd in cubes.
2.Save remaining bottle gourd cubes and chop them.
3.In a small bowl, mix the shredded ginger, coriander powder, funnel, red
chili powder, paprika, turmeric, and ¼ cup of water to make a paste.
4.Heat some oil in a pan,add in cumin seeds,asafoetida,fenugreek seeds and red chillies,saute for few seconds.
5.Add the spice paste and stir-fry for a minute until spices start leaving the oil.
6.Add bottle gourd pieces,salt and 1/4 cup water.Mix well.
7.Cover and cook on medium heat until they are tender.
8.Cook till done add in mango powder,sugar and coriander leaves.Cover for a minuteAdjust salt and serve hot.
