Veggie Hash Browns


1.Red potatoes 2 medium
2.Zucchini 1 small
3.Mushrooms 1/2 cup sliced
4.Red capsicum 1 cut into cubes
5.Oil 2 1/2 tbsp
6.Salt to taste
7.Black pepper 1/8 tbsp
8.Ginger juice 1 tbsp
9.Coriander leaves 1/4 tbsp
10.Green chilli 1 minced
11.Lemon juice 2 tbsp
12.Cheese 1/4 cup


1.Boil the potatoes peel and shred,heat a pan over medium heat grease the pan generously and spread the shredded potatoes evenly. Let it cook for 3-4 minutes.
2.Drizzle about 1 tablespoon of oil over potatoes and fry till golden brown color.
3.Cook on both sides,While the potatoes are cooking heat the other pan over medium heat put the 1 tablespoon of oil and adds all the vegetables.
4.Stir-fry the veggie for few minutes till crisp.Turn off the heat add ½ teaspoon of salt or adjust to your taste and black pepper. Mix it.
5.Transfer the potatoes on the serving plate sprinkle salt to taste, 1
teaspoon of ginger juice garnish with half the cilantro, green chili and
drizzle some lemon juice.
6.Top the potatoes with stir-fry veggies, and garnish the veggies drizzling ginger juice, cilantro, green chili and lemon juice.
7.Last top it with cheese and put the plate in microwave for a minute to melt the cheese,serve hot
