Rhubarb Chutney

Rhubarb Chutney


1.Rhubarb 1 pound
2.Green chillies 4
3.Ginger 2 tbsp
4.Oil 2 tbsp
5.Turmeric powder 1/4 tbsp
6.Fenugreek seeds 1/4 tbsp
7.Coriander seeds 1 1/2 tbsp
8.Cumin seeds 1 tbsp
9.Fennel seeds 1 tbsp
10.Salt to taste
11.Paprika 1/4 tbsp
12.Sugar 1/3 cup


1.In a blender coarsely ground the fenugreek, coriander, fennel and cumin seeds.
2.In a pan heat some oil and add all the ingredients except the sugar. Mix it well.
3.Cook over medium heat until the rhubarbs are tender.Cook on medium heat make sure it does not burn from the bottom.
4.Add sugar to the rhubarb and cook on low heat for about 1 minutes after rhubarb start sizzling.Refrigerate the chutney until 6 weeks.
