Carrot Fried Rice

Ingredients:

1.Carrot grated
2.Coconut slices
3.Green chillies
4.Mustard seeds
5.Cumin seeds
6.Ginger garlic paste
7.Capsicum chopped
8.Cooked rice
9.Coriander leaves
10.Garam masala
11.Cashew nuts
12.Salt to taste
13.Ghee

Preparation:

1.Take a pan pour 2 tbsp ghee and melt it.
2.Fry cashew for few minutes and transfer into a small bowl.
3.In the same pan add some more oil and heat it,add in cumin seeds,mustard seeds,green chillies and stir fry for few seconds.
4.Add grated carrot 1/2 cup,coconut slices and fry for few minutes.
5.Add chopped capsicum,ginger garlic paste and fry for few seconds,add boiled rice,salt and give it a good mix.
6.Finally sprinkle some garam masala powder and give it a stir,transfer into a bowl,garnish with fried cashews.
