Capsicum Fried Rice

Ingredients:

1.Rice
2.Capsicum diced
3.Tomatoes chopped
4.Onion chopped
5.Green chillies chopped
6.Fenugreek leaves
7.Pudina leaves
8.Coriander leaves
9.Curry leaves
10.Green peas
11.Ghee
12.Ginger garlic paste
13.Garam masala powder
14.Oil
15.Cashew nuts
16.Tempering seeds

Preparation:

1.Take a pressure pan pour some oil ghee and 1 tbsp oil,heat it.
2.Add tempering seeds and stir fry for few seconds.
3.Add capsicum,onion chopped,fenugreek leaves and saute for few minutes.
4.Add tomatoes chopped 1 cup,turmeric powder,salt to taste and mix well.
5.Add some pudine leaves,curry leaves,cashew nuts,garam masala powder and give it a mix.
6.Add soaked rice to fried mixture and add some water as required for cooking rice(2 cups water).
7.Add some salt to rice and mix well,cover and cook for 2 whistles till done.
8.Transfer into a bowl,garnish with coriander leaves.
