Ingredients:

1.Brinjal
2.Tamarind
3.Broad beans (Ginja chikkudu)
4.Fenugreek leaves
5.Green chillies
6.Carrot
7.Coriander leaves
8.Sesame seeds
9.Niger seeds (Gaddi nuvvulu)
10.Tempering seeds
11.Oil
12.Salt to taste
13.Turmeric powder
14.Jaggery
15.Onion chopped

Preparation:

1.Take
a deep pan pour some water as required,add in brinjals,lima beans,green
chillies slitted,carrot and bring it to boil for 5 minutes.
2.Remove the green chillies from boiling water and keep aside.
3.Take gaddi nuvvulu,add to bopiled green chillies,sesame seeds and blend into a smooth paste.
4.Meanwhile
squeeze out the juice from tamarind,keep aside.Add boiled brinjals and
mash them in tamarind juice until skin peels off.
5.Add rest of the cooked veggies to tamarind juice,add in salt to taste and mix well.
6.Add ground sesame paste and mix it evenly.
7.Meanwhile
take another pan pour some oil and heat it,add in mustard,cumin
seeds,dried red chillies,curry leaves,turmeric powder,fenugreek leaves
and stir fry for few minutes.
8.Add some jaggery to fried mixture and
finally transfer into tamarind stew and mix it well.Garnish with
coriander leaves and serve.
