Vankaya Chutney

Ingredients:

1.Brinjal
2.Green chillies fried in oil
3.Tamarind
4.Cumin seeds
5.Onion chopped
6.Coriander leaves
7.Garlic cloves
8.Salt to taste

Preparation:

1.Firstly roast the brinjal on flame for few minutes till they are cooked well.
2.Peel the skin and keep aside in a plate.
3.Take a traditional Indian stone grinder add in green chillies and blend into a smooth paste.
4.Add
fried brinjal in grinder and blend well,add tamarind as required,salt
to taste,garlic cloves,cumin seeds and grind well into a paste.
5. Add chopped onions into the mix and blend well.Transfer the chutney into a bowl.Garnish with onions and coriander leaves.Serve with roti or rice.
