Gongura Mushroom Curry

Ingredients:

1.Gongura 1 bunch
2.Mushrooms 200 grams
3.Tempering seeds 1 tbsp
4.Dried red chillies 2
5.Onion chopped 1
6.Green chillies chopped 2
7.Oil 3 tbsp
8.Ginger garlic paste 1 tbsp
9.Curry leaves
10.Salt to taste
11.Red chilli powder
12.Turmeric powder
13.Garam masala powder
14.Fried cashew nuts

Preparation:

1.Take a pan pour some oil and heat it,add in onions,green chillies and saute for few seconds.
2.Add curry leaves,mushrooms and mix well.Cover and cook for few minutes on medium flame.
3.Meanwhile take another pan add gongura,turmeric,salt and some water.Cover and cook till tender.
4.Add ginger garlic paste,turmeric,salt to mushrooms and saute.
5.Add red chilli powder,garam masala powder and some water,bring it to boil till done.
6.Mash gongura leaves and to mushrooms and saute well for a minute.
7.Take another pan pour some oil and heat it,add dried red chillies,tempering seeds,onions,curry leaves and saute for few seconds.Finally transfer into mushroom mixture and mix well.Serve hot.
