1.Basmati rice 1 cup
2.Pudina paste 1/2 cup
3.Brinjal 3
4.Green chillies 3
5.Tempering seeds 1 tbsp
6.Curry leaves
7.Salt to taste
8.Dried red chillies 2
9.Oil 2 tbsp
10.Pudina leaves


1.Take a pan pour some oil and heat it,add tempering seeds,dried red chillies,green chillies,curry leaves and saute for few minutes.
2.Add brinjal slices to the frying pan and stir fry for few minutes,cover and cook.
3.Add pudina paste,salt and mix well,fry for few minutes until raw smell goes off.
4.Finally add cooked rice and mix well evenly.Transfer into a bowl and    garnish with pudina leaves.Serve hot.
