Nethi Vankaya Kura


1.Brinjal 1/4 kilo
2.Cashew nut paste 1/2 cup
3.Tomato puree 1/2 cup
4.Green chilliles 4
5.Salt to taste
6.Red chilli powder
7.Cumin powder 1 tbsp
8.Curry leaves
9.Ghee 2 tbsp
10.Turmeric powder a pinch
11.Coriander leaves


1.Take a pan add ghee and melt it,add green chillies,curry leaves and saute for few seconds.
2.Add brinjal pieces and mix well.Fry till nice golden brown colour.
3.Add tomato puree,salt,red chilli powder,turmeric powder and give it a good mix.
4.Add cashew nut paste,cumin powder and mix well,keep stirring the mixture without sticking to the bottom of pan.
5.Add some water as required and keep stirring till it attains thick consistency.
6.Switch off the stove and transfer into a bowl,garnish with coriander leaves.Serve hot.
