Vankaya Pappu Kura

Ingredients:

1.Soaked toor dal 1 cup
2.Brinjal 1/4 kilo
3.Onion chopped 1
4.Tempering seeds 1 tbsp
5.Tomatoes chopped 1
6.Green chillies 4
7.Tamarind juice as required
8.Salt to taste
9.Red chilli powder
10.Curry leaves
11.Coriander leaves
12.Dried red chillies 4
13.Cumin seeds 1 tbsp
14.Coriander seeds 1 tbsp
15.Dry coconut small piece

Preparation:

1.Take a pan pour some oil and heat it,add cumin,urad dal and saute for few seconds,add curry leaves,coriander leaves,onions and saute for few minutes.
2.Add tomatoes and cook till nice and tender,add green chillies,turmeric powder and saute.
3.Add toor dal,brinjal and mix well.Cook for a minute,add ground masala powder (dried red chillies,dry coconut,coriander seeds,cumin seeds)_and stir well.
4.Add tamarind juice,some water and mix well.Cover and cook for few minutes till done.Transfer into a bowl and serve hot.
