Vankaya Senagala Kura

Ingredients:

1.Brinjal 1/4 kilo
2.Kabuli chana 1 cup
3.Tomatoes chopped 2
4.Green chillies 3
5.Salt to taste
6.Red chilli powder
7.Turmeric powder a pinch
8.Ginger garlic paste 1 tbsp
9.Coriander powder 1 tbsp
10.Garam masala powder 1/2 tbsp
11.Curry leaves
12.Tempering seeds 1 tbsp
13.Coriande leaves
14.Oil 2 tbsp

Preparation:

1.Take a pan pour some oil and heat it.Add tempering seeds,ginger garlic paste and saute for a minute.
2.Add curry leaves,green chillies,brinjal and mix well,fry for few minutes.
3.Add turmeric powder,salt,red chilli powder and give it a stir.Add tomatoes and cook for another few minutes till tender.
4.Add soaked and boiled kabuli chana(even mashed) and mix well.Add some water as required as per gravy consistency.
5.Add coriander powder,garam masala powder and stir well.Switch off the flame and transfer into a bowl,garnish with coriander leaves and serve hot.
