Butter Brinjal Curry


1.Brinjal 1/2 kilo
2.Butter 50 grams
3.Coriander powder 1 tbsp
4.Red chilli powder 1 1/2 tbsp
5.Turmeric powder 1/2 tbsp
6.Ghee 30 ml
7.Cumin seeds 1/2 tbsp
8.Onion chopped 1/2 cup
9.Ginger garlic paste 1 1/2 tbsp
10.Cashew & Coconut paste 1/2 cup
11.Oil 20 ml
12.Garam masala powder 1/2 tbsp
13.Coriander leaves 2 tbsp
14.Milk 1/2 cup
15.Salt to taste
16.Tomatoes chopped 2


1.Take a pan pour some oil,butter and heat it,add cumin seeds,onions,salt and saute for a minute.
2.Add ginger garlic paste,some water and stir well,add tomatoes,red chilli powder,coriander powder and saute for another few minutes.
3.Add some water coconut and cashew paste,milk to the pan and mix well.
4.Add fried brinjal,butter,ghee and mix well evenly,cook for a minute.Switch off the stove and sprinkle some garam masala powder,coiander leaves.Transfer into a plate and serve hot.
