Chikkudu Ginjala Parata


1.Chikkuduginjalu 1 cup
2.Carrot grated 1/2 cup
3.Maida 1/2 cup
4.Wheat flour 1 cup
5.Boiled potato 1
6.Ginger garlic paste 1 tbsp
7.Salt to taste
8.Garam masala powder 1 tbsp
10.Coriander leaves
11.Green chillies 6
12.Fenugreek leaves 1/2 cup
13.Ghee 2 tbsp


1.Boil chikkudu ginjalu,potato,fenugreek leaves,coriander leaves,pudina,gren chillies,carrot,salt into a smooth paste.
2.Take a bowl add wheat flour,maida,ghee,ginger garlic paste,garam masala powder and ground paste,mix well evenly and prepare a dough.
3.Divide the dough into equal portions and prepare parathas by dusting some flour.
4.Meanwhile heat a skillet and place the paratha,drizzle some ghee around and cook evenly on both sides till done.Serve hot.
