Ingredients:

1.Brinjal
2.Peanuts
3.Green Peas
4.Beans
5.Carrot
6.Curry leaves
7.Red chilli powder
8.Ginger garlic paste
9.Pudina
10.Salt
11.Turmeric
12.Garam masala powder
13.Coriander
14.Fenugreek leaves
15.Onions
16.Green chillies
17.Tempering seeds
18.Tomatoes
19.Whole garam masala
20.Oil
21.Rice
22.Bay leaves

Preparation:

1.Boil soaked basmati rice in a pan,cook till rice is half boiled.
2.Meanwhile fry brinjal pieces for few minutes till they change into light brown colour.
3.Heat some oil in a pan add whole garam masala,bay leaves,tempering seeds and saute.
4.Add curry leaves,onions,peanuts,green chillies and saute for few minutes,add beans,carrot,pudina,coriander leaves,fenugreek leaves and fry till tender.
5.Add ginger garlic paste and fry,add tomatoes,boiled green peas,salt and stir well.
6.Add red chilli powder,garam masala powder,water and cook for few minutes,drain the water from rice.
7.Add fried brinjals pieces,some salt to frying pan,mix well.Cover and cook for few minutes.
8.Finally add half boiled rice on top and mix well,cover and cook for another 5 minutes till done,sprinkle some coriander leaves and serve hot.
