Carrot Capsicum Rice

Ingredients:

1.Carrot grated 1 cup
2.Rice 1 cup
3.Capsicum sliced 1
4.Tempering seeds 1 tbsp
5.Curry leaves
6.Pudina
7.Coriander leaves
8.Salt to taste
9.Turmeric powder
10.Lemon juice 1 tbsp
11.Dried red chillies 5
12.Urad dal 2 tbsp
13.Coriander seeds 1 tbsp
14.Toor dal 2 tbsp
15.Chana dal 2 tbsp
16.Oil 3 tbsp

Preparation:

1.Heat some oil in a pan,add tempering seeds,curry leaves,pudina,capsicum and saute for few minutes till tender.
2.Add carrot and saute,cover and cook for few minutes.
3.Add salt,ground masala powder ( dry roasted chana dal,toor dal,urad dal,coriander seeds,dried red chillies) to the pan and mix well.
4.Finally add cooked rice and give it a good mix,coat well the rice.Add lemon juice and stir well.Garnish with cashew nut and pudina,serve hot.
