Aloo Baisakhi

Ingredients:

1.Potatoes 1/4 kilo
2.Onions chopped 1 cup
3.Green chillies 50 grams
4.Paneer 200 grams
5.Pudina chopped 1 cup
6.Curd 1 cup
7.Turmeric powder 1/2 tbsp
8.Coriander leaves
9.Salt to taste
10.Oil for deep frying

Preparation:

1.Heat sufficient oil for deep frying,add scooped potatoes and deep fry till nice golden brown colour.
2.Meanwhile in a bowl combine paneer,pudina,green chillies,salt and mix well all the ingredients.Stuff this mixture in potatoes fried and keep aside.
3.Heat some oil in a pan,add onions and saute till nice brown colour,add turmeric powder,green chillies,salt and mix well.
4.Add curd and mix well,cook for few minutes.Add pudina leaves,stuffed potatoes and cook for another few minutes till potatoes are cooked.Transfer into a bowl and garnish with coriander leaves.Serve hot.
